چکیده
Abstract: The objective of this work was to select cassava (Manihot esculenta) genotypes from the Brazilian germplasm bank with a functionality similar that waxy starch. A total 881 were pre-selected using principal component analysis and hierarchical clustering, their industrial potential compared 7745-5WX WX-Maize maize clones, both used as references. Two stood out: BGM0036 BGM0083. Samples these four characterized by means amylose content, scanning electron microscopy, X-ray diffraction, differential calorimetry, paste viscosity, chain-length distribution amylopectin. samples presented A-type crystallinity no statistical differences (p > 0.05) regarding degree (25.3 30.0), which shows proportions amylose/amylopectin fractions. No observed in microstructure starches. Initial gelatinization temperature amylopectin short chains very strong negative correlation, indicating lower proportion results higher initial gelatinization. BGM0083 show low final close starches, being an alternative for use different foods require stability during freezing.

Characterization of normal and waxy corn starch for bioethanol production.
Objectives of this study were to compare ethanol production between normal and waxy corn using a cold fermentation process and to understand effects of starch structures and properties on ethanol production. Ethanol yields positively correlated (p < 0.01) with starch contents of kernels of the normal and waxy corn. The average starch-ethanol conversion efficiency of waxy corn (93.0%) was substa...
متن کاملBiological Implications in Cassava for the Production of Amylose-Free Starch: Impact on Root Yield and Related Traits
Cassava (Manihot esculenta, Crantz) is an important food security crop, but it is becoming an important raw material for different industrial applications. Cassava is the second most important source of starch worldwide. Novel starch properties are of interest to the starch industry, and one them is the recently identified amylose-free (waxy) cassava starch. Waxy mutants have been found in diff...
متن کاملFunctionality of chemically modified wild-type, partial waxy and waxy starchesfrom tetraploid wheats
Partial waxy (reduced-amylose) and fully waxy (amylose-free) tetraploid durum wheats (Triticum turgidum L. var durum) were developed by introgression of null alleles at the Wx-A1 and Wx-B1 loci from common hexaploid wheat (Triticum aestivum L.). Purified starches were obtained from each genotype, and chemically modified by: 1) cross-linking with phosphorus oxychloride, 2) substitution with prop...
متن کاملFlocculation of kaolin by waxy maize starch phosphates
Waxy maize starch phosphates were tested as flocculants in order to determine if they have the potential to replace petroleum-based polymer flocculants currently used commercially. Phosphorylation was carried out by dry heating of starches and sodium orthophosphates at 140 C for 4 h. Native and phosphorylated waxy maize starches were ineffective as flocculants for kaolin in deionized water. How...
متن کاملAdenosine diphosphoglucose-starch glucosyltransferases from developing kernels of waxy maize.
TWO ADENOSINE DIPHOSPHOGLUCOSE: alpha-1,4-glucan alpha-4-glucosyl-transferases were extracted from kernels of waxy maize harvested 22 days after pollination and separated by gradient elution from a diethylaminoethyl-cellulose column. Both fractions could utilize amylopectin, amylose, glycogen, maltotriose and maltose as primers. The rate of glucose transfer from adenosine diphosphoglucose to ra...
